Ham hocks and shanks are the answer to your kettle of beans or simmering soup. The hock is the lower segment of the pig that corresponds to the ankle or calf region. Hocks are not fatty but can be made tender from all the collagen that breaks down during cooking. Shanks are from higher up on the leg and tend to be meatier, making them a little more versatile or better for really beefing up a big pot of soup. *Both of these products are fully smoked.
